INGREDIENTS:
4 Tbsp Coconut Oil
2 Tbsp CorianderWhole
2 Tbsp Fennel Whole
2 Tbsp Mustard Seed
1 Tbsp Fenugreek
2 Tbsp Garam Masala
4 Tbsp Curry Powder
1 Tbsp Black Pepper
1 tsp Cayenne pepper
1/2 Cup Garlic Chopped Finely
1 Cup Red or Yellow Onion Chopped Finely
6 Cups Vegetables of Choice: Eggplant, Zucchini, Red or Yellow Pepper, Corn, Beans, Squash
Start with a large enough pan to make the amount you desire. In this recipe we use a medium sauce pan. Add all ingredients in that order except for the vegetables. Let simmer on low for 10 minutes as you mix with love with a wooden spoon. Add 8 cups of water. Then add your sliced vegetables. If you are using a combination of vegetables start with the harder vegetables like squash and then after about 10 minutes or more, until softer, add your softer vegetables like corn or peppers. Turn up the heat until slight boil then turn down the heat and let simmer on low heat until the desired consistency is reached.
