SPROUTED WILD RICE TABOULI
Ingredients:
5 cups finely chopped parsley – not packed cups, just loose
1 cup sprouted wild rice – You can also substitute with other grain or finely diced parsnip to keep it raw
¼ cup minced mint
2 tomatoes diced – about 2 cups
1 cucumber diced – about 2 cups
¼ cup lemon juice
½ cup olive oil
1 Tbsp salt
Start with lemon juice, olive oil and salt add minced herbs, tomatoes, cucumber and rice.
Toss with Love
Makes about 10 cups
Great with our onion bread or chia crackers
