Some people love hummus but have a hard time digesting beans. It's really easy to make your own bean-free hummus that tastes just as good as garbanzo bean hummus. This dish is raw and great for bringing to pot lucks or if you need to whip up something quickly. This is the same recipe we use here at the cafe.
4 cups peeled zucchini
6 Tbsp lemon juice
6 Tbsp olive oil
2 Tbsp garlic cloves
1 Tbsp. cumin
1 Tbsp sea salt
2 cups raw tahini
Blend all of the ingredients in a blender until smooth.
Great as a dip with fresh veggies, ChocolaTree Chia Crackers, ChocolaTree Onion Bread, or in combination with our tabouli, falafel and onion flat bread for a delightful meal.
